Family Recipe

Ever since I was younger I’ve enjoyed baking. As an adult I much prefer baking over cooking. One of my favorite things to make is a recipe that’s been in our family for years. My mother used to make it every time that I came home from college, and when I was a kid she made it for me sometimes to cheer me up. The recipe is for the most delicious banana chocolate cake ever. I make it sometimes as a regular cake, as muffins, or as a loaf cake with vanilla glaze.

It calls for 2 large bananas, ¼ cup orange juice, 1 ½ sticks of margarine, 2 cups sugar, 2 eggs, 1 teaspoon vanilla, 2 cups flour, 1 teaspoon baking soda, one teaspoon baking powder and one bag of chocolate chips. All you need to do is mash the bananas by hand and combine it with juice in one bowl. In another bowl combine flour, baking soda and powder. In an Eclectrics® Mixer cream margarine eggs, sugar and vanilla. Add banana mixture and dry mixture alternately until mixed. Add chocolate chips and mix on low speed. Spread in greased pan and bake for forty five minutes.

The recipe isn’t so hard to follow, but you must have a good mixer. I used to make it with an older mixer that only had three different settings and it never came out well. Now that I’ve bought the Hamilton Beach® Mixer it’s a completely different story. This mixer has twelve settings which offer more mixing flexibility and precise control. The Hamilton Beach® Stand Mixer makies any recipe so much easier.
